White FISH with Oyster Mushrooms



We always wanted to go back to europe so when we got the assignment to come here in Germany we were so happy. But then I was worried about if they have good fish because I love fish. So after a few days when we got here I found this fresh fish from the commissary and their delicious oyster mushrooms. I have no idea what kind of fish is this but the meat is white so I called it white fish :-)


2 fillet white fish
1 small white onion sliced
3 cloves garlic
1/2 tsp crushed red pepper
2 broccoli (blanched)
2 cups sliced oyster mushrooms
3 green onions 2 inch cut
4 tablespoons olive oil
1 tablespoon soy sauce
salt and pepper to taste

Season the fish and fry it 3 minutes on each side. After frying the fish take it out from the pan and add he onion after the onion is brown a little bit add the garlic. Then sautee the mushrooms add some salt, pepper and the red pepper. when the mushrooms is cooked add the fish and the broccoli and add the soy sauce and then serve.

Avocado and Orange Salad

I love avocados I grew up eating it but not in a salad. In the Philippines we make it as a dessert like ice cream or add it in a fruit salad. Also we don't have the avocado hass we have the big ones I still have the picture in my mind of my Lolo and Lola's avocado tree :-)



INGREDIENTS

4 pieces avocado hass
3 oranges
lettuce or any greens you have enough to cover the platter for your salad
4 or 5 cherry tomatoes

dressing
1 tbsp yellow mustard
salt and pepper to taste
juice and zest of 1 big lemon
5 tbsp olive oil
1 tbsp honey

Put the greens in a platter. Peel and cut oranges into segments then set aside. Make your dressing then slice the avocados and dip them individually into the dressing before arranging them into the platter. Add the oranges and tomatoes and drizzle the rest of the dressing on top of your salad.

Tallarines Verdes "Green Spaghetti"

I have learned to cook and eat this when I was in Peru . It is a kind of dish that you will never forget because it is sooo good :)


INGREDIENTS :

1 lb whole grain spaghetti
1 clove chopped garlic
1 red onion sliced
1 lb fresh spinach
1/2 lb fresh basil
100 grams feta cheese
3 T olive oil
1/4 cup evaporated milk or water

Cook the pasta to al dente
In a pan sautee the garlic and onion with the olive oil . Then add the spinach and basil and cook it until the greens are wilted. Put the milk/water, cheese and the green mixture into the blender then liquify it then add it to the cooked pasta. I love to serve it with steak or if you want chicken you can do that too :) Enjoy !!!

Whole Wheat Spaghetti w/ Mussels

One of my faves love love seafood  and there is nothing better than a good Spaghetti w/ Mussels for dinner. Also if you want to add more seafood into this recipe you can :) especially shrimp !!!


INGREDIENTS

1 lb whole wheat spaghetti
1 lb fresh mussels
1 can baby oysters
5 cloves chopped garlic
1 diced fresh tomato
1 whole lemon
5 T olive oil
1 cup white wine
salt and pepper to taste

In a pan sautee the garlic then add the rest of the ingredients except for the spaghetti and mussels. Add the whole juice of the lemon as well as the rind. When it boils add the mussels cover it until it is done then add the cooked spaghetti... When it comes to whole wheat pasta you have to check the ingredients of the package that it says whole wheat, whole grain or whole durum. The reason i am telling you this because some will say whole wheat but actually they are just 51% whole wheat ...  

Whole Wheat Lasagna

My Daughter Zoe loves Lasagna i believe because of watching Garfield and so as my son Trey but not because of Garfield like her sister he just love food :)


INGREDIENTS

1 lb whole wheat lasagna
1 lb ground turkey
4 cloves chopped garlic
1 cup chopped parsley
3 T tomato paste
2 cans fire roasted diced tomatoes
1 package shredded low moisture part skim mozzarella cheese
1 cup chopped basil
1 T dried oregano
3 T olive oil
salt and pepper to taste

In a pan sautee the garlic, parsley and basil then add the tomato paste and the turkey. When the meat is brown add the canned tomatoes when it boils let it simmer for at least 25 minutes. In a baking dish layer the cooked lasagna, turkey tomato sauce and the cheese then bake it for 30 minutes @375 F... Enjoy !!! You can add more cheese if you want depending on how you like it :)

POLLO SALTADO w/ BROWN RICE

This is the healthy version of a typical Peruvian Dish Lomo Saltado instead of beef i used chicken and the fried potatoes i replaced it with a brown rice....


INGREDIENTS

2 boneless skinless chicken breast
3 cloves chopped garlic
3 T olive oil
1 sliced red onion
1 sliced tomato
1 cup chopped cilantro
salt and pepper to taste
2 T soy sauce
2 T white vinegar
2 cups cooked brown rice

In a pan saute the garlic and chicken in high heat just like cooking a stir fry. When the chicken is almost done add the sliced tomato and onion and soy sauce. When the onion and tomato is cooked turn the heat off and add the vinegar and cilantro,  mix it well then serve it brown rice..

SPAGHETTI w/ SALMON and ONIONS

                       Easy to make great flavor and a very affordable meal !!!


INGREDIENTS
1 lb whole wheat spaghetti
1 14.75 oz can wild alaskan salmon
1 white onion thin sliced
2 cloves chopped garlic
1/2 cup chopped parsley
1 lemon
3 T olive oil
salt and pepper to taste

In a pan saute the garlic and onion in olive oil then add the can of salmon without the juice. Add the lemon zest and juice of the whole lemon then the parsley. Then mix the cooked whole wheat pasta if you desire you can add parmesan cheese :)
