POLLO SALTADO w/ BROWN RICE

This is the healthy version of a typical Peruvian Dish Lomo Saltado instead of beef i used chicken and the fried potatoes i replaced it with a brown rice....


INGREDIENTS

2 boneless skinless chicken breast
3 cloves chopped garlic
3 T olive oil
1 sliced red onion
1 sliced tomato
1 cup chopped cilantro
salt and pepper to taste
2 T soy sauce
2 T white vinegar
2 cups cooked brown rice

In a pan saute the garlic and chicken in high heat just like cooking a stir fry. When the chicken is almost done add the sliced tomato and onion and soy sauce. When the onion and tomato is cooked turn the heat off and add the vinegar and cilantro,  mix it well then serve it brown rice..

SPAGHETTI w/ SALMON and ONIONS

                       Easy to make great flavor and a very affordable meal !!!


INGREDIENTS
1 lb whole wheat spaghetti
1 14.75 oz can wild alaskan salmon
1 white onion thin sliced
2 cloves chopped garlic
1/2 cup chopped parsley
1 lemon
3 T olive oil
salt and pepper to taste

In a pan saute the garlic and onion in olive oil then add the can of salmon without the juice. Add the lemon zest and juice of the whole lemon then the parsley. Then mix the cooked whole wheat pasta if you desire you can add parmesan cheese :)

STUFFED GREEN PEPPERS

I have been eating healthy food for over a month now and i definitely lose some weight :) I always wanted to share this recipe for all the people out there who love stuffed green peppers :)


INGREDIENTS

4 medium size green peppers
1 lb ground turkey or chicken
2 cloves chopped garlic
1 medium size chopped onion
1 diced tomato
1/2 cup parsley
1 can 8 oz tomato sauce
3 T olive oil
salt and pepper to taste
1 cup cooked brown rice

Cut top off peppers, remove the seeds and membranes then rinse it with a cold water. In a large pot put the peppers also the top of the peppers add cold water and salt let it boil then reduce the heat and simmer it for 5 minutes. When it's done take the peppers out and set it aside.

Saute garlic and onions in a pan then add the tomatoes and the turkey or chicken season it with salt and pepper and let it cook. When it's cooked add  the parsley, rice and half of the tomato sauce mix it well. Stuff the peppers with the cooked chicken or turkey add the remaining tomato sauce on top of the peppers then put it in a baking dish and  bake @350 F for 45 minutes.
